The term comes from the Greek and means to put together, to join two distinct parts.
It goes perfectly with the cuisine of our chef Nicola Laera who, having his father from Puglia and his mother from Ladin, knows how deep the sea is and how high the mountains are.
This connection inspires this particular cuisine, which in an eight-course menu and one which finds a sincere synthesis, flashing like a fish and generous like the Dolomites.
