A simple approach to things
I was born down in the plains and now I find myself up in the Dolomites. I like it here. I like it because I can express a type of cuisine that tastes like home. When I prepare the dishes, a thought goes to my grandmother, to the simplicity that warms my heart, to that concreteness that is made of roots and not of other elaborations.
I worked in France in a three star Michelin restaurant, and before that I studied at Alma where I was lucky enough to meet chef Marco Soldati, whom I consider my mentor, the person who more than any other has contributed to my development. This is the fourth season I am spending here at Ladinia and if I can tempt you, why not come along and see us here at Ladinia - you know that you will find the best of home cooked food in the best of mountain settings.
