When in a dish the recall of the known amalgamates with the fascination of the new, the taste buds begin to get excited. They already know what they can foretaste, but they also sense that there will be some surprises. Cooking is a historically determined art, which is produced thanks to techniques, knowledge of materials and imaginative skills. However, this art is not limited to its visual representation, which is the antithesis of everyday dining. A good dish must go beyond immediate amazement, beyond the ephemeral, to give emotions that must be shared between diners. Cooking is the art of conviviality.
