A Ladin recipe

The secret of beauty lies in the research for simplicity.
Ladin mountain kid:

For ½ mountain kid (weight approx. 3 kg): Stir 4 tbsp butter until foamy and blend in 2 chopped garlic cloves with 2 tbsp chopped herbs (parsley, thyme, rosemary).
Rub the mixture onto the kid, then cover with foil and leave for 2 - 3 hours. Only then season with salt and pepper.
For the vegetables (1 shallot, ½ garlic bulb, 5 artichokes, 3 potatoes, ½ kg cherry tomatoes): Season lightly with sea salt and freshly ground pepper. Spread 2 bay leaves, 3 twigs of thyme and 1 twig of rosemary over the vegetables. Place the mountain kid on top and pour 1 l of water in from the side. Cook the meat for about 1 ½ hours in an oven at 150 degrees. Repeatedly baste the kid with the stock until lightly brown.
Prior to serving, sprinkle with a chopped spring onion.
